The original West River 180 will never broach under sail; kayak and amas together track so well that it'd be hard to get the stern to skid out.
The same strong tacking will make it slow in tacks, however, so a large, efficient rudder is needed to swing the stern around.
In a straight line I'd expect the old West River 180 to be spectacularly fast under sail. One ponders surfski-style wings applied to the needle-nose bow to get it up and over waves at high speed.
