6566 plywood is a toss-up. Sometimes it's as bad as lauan. Sometimes it's pretty nice, but you might not know until you run into a delamination or a void. As a percentage of the total cost of the project in time and money, and weighed against the long life of these boats, the plywood is a small chunk. Get nice plywood.
If you're very careful and you use the full-sized layout in the MC13 plans, you can fit all the side panels onto one sheet. An extra sheet of 4mm WILL make it easier, but there'll be some waste.
