I believe someone mentioned runners in this thread, jokingly, I take it.
But it may be something to consider for a purpose-built winter kayak.
My Dad had runners on his old hunting sneakbox, just simple thin narrow wooden strips capped with bronze half-oval. Made towing the boat over the ice a snap. Wouldn't add much weight and may actually improve tracking a bit, like a lake keel on a canoe. Something to think about.
