Why thin with anything? I suspect the bubbles are from the alcohol leaving the epoxy.
Mixing epoxy always makes bubbles so you will get a few in your coating. That is what the tipping off with a brush (light strokes) does - pops the bubbles.
Sand it smooth and use plain undiluted epoxy then tip.
