don't plane off anything. You start at the gunnels and let the strips run off the bow and stern where they happen to. Somewhere around the turn of the bilge you have to change and start tapering one end, because the ends not longer can run off, but meet the oterh side strip. But the remainder of strips are still left alone on the edges. There does begin to to be a good bit of "edge set" as you get down on the bottom, but it's easy to accomplish.

I would imagine that a kayak hull (or deck)would do the same.

Actually, it's a pretty simple thing to do, with or without the coved strips.
