I'm lazier that most builders, so I just use the 3M pad between coats, except for a quick wetsand with 400 before the final one.
I don't worry about the dust, the 3M or a finger nail gets the bumps after each coat. The final coat is polished with a boat polish after it's cured. This knocks off the dust and lowers the gloss ever so slightly to reduce glare and hi-lite the grain a bit more. Leaves the boat feeling smooth and elegant.
