If it's somewhere you don't mind the looks, just lay down a second piece of tape on top of the first.
You can also avoid the wet-out problem by:
1. Brush epoxy on the wood before applying fillet. 2. Let the fillet sit for a few minutes (enough to just barely start firming up) and brush epoxy on it then. This will help smooth the fillet. 3. Lay down a sheet of plastic on a table, lay a piece of tape on the plastic, wet the tape out and then put it in the boat. 4. When wetting the tape, don't use a brush. Instead, pour a little epoxy on the tape and work it in with a squeegee.
Overall, you'll end up using less epoxy, get better wet-outs and any tape that does not wet out does not need to be placed in the boat.
