Craig,

I've had the same questions - my knees are way out to the sides touching the shear clamps and a few inches further forward than the front of the coaming.

My guess is that the extra surface and padding is there for smaller paddlers who may use your kayak.

If no one else will EVER use it, then I see no reason not to open her up to suit your longer legs. I'd just make sure not to extend the opening beyong the dimensions of your spray skirt and rain cover.

Wait for more informed input than mine before whipping out your saw though!
