It's always a good idea to avoid breathing or skin contact with volatile organic chemicals (VOCs) as most have a variety of long term health effects and can make you woosey in the short term. Some are nastier than others, and a look at the chemical's material safety data sheet (available from the manufacturer or on the internet from several sites) will give you a better understanding of what the effects are and how to protect yourself from them.
So yes, be careful with varnish, also. I paint and varnish in a garage with the doors open and my respirator on. I don't worry about dust much, as I use a boat polish on my britework.
