It's my understanding that if you add too much hardener you end up with a more brittle epoxy that will be subject to cracking over time. The slow curing time you are noticing would be due to cold weather only. Adding extra hardener should actually reduce the time that the epoxy sets.

If you are in doubt I see two alternatives to consider: (1) if the structural integrity of the kayak won't be compromised by the area having a more brittle epoxy on it, leave it; or (2) let it harden, sand off the epoxy or better yet use a heatgun to remove it more effectively, resand the affected wood, then reapply properly mixed erpoxy.

If I am wrong about this, someone please chirp in and correct me.
