Mill Creek 16.5 stability

Can those of you who have built a Mill Creek 16.5 compare its stability to, say, an average canoe? I ordered the plans today based on what I've read so far.
I've never paddled a kayak (evem though I'm 65), and I'd like a very solid feel. I'd may convert it to (optional) electric power, and will probably try a sliding rowing seat. I may increase the freeboard a bit and use less decking to get more room for two people.
It will be used only on a lake, with pretty calm conditions most of the time.
