It may depend on the kind of wood you use. George Ellis, greenland paddle guru, insisted that his students left their softwood paddles simply oiled - not varnished, so dings could be steamed out. I don't know if that could be done with hard wood.

I've looked at the dings on my rails and the epoxy hasn't cracked as you feared. It isn't really thick enough.

Whatever you decide - get out there and have fun - you'll see that after a bit, you won't be as worried about dings as you are with a pretty new boat.
