What I found with the canoe, which has 5 planks on each side, was that when I hung it, the pressure compressed the planks, altering the shape of the canoe significantly and I couldn't really tell what was even. The planks are 4mm and very easy to distort with even a little pressure, so when 5 of them were compressed, it made a noticable difference in the shape. On the sawhorses, the canoe just rested there in it's natural shape and it was easy to see where the problems were. Seeing as this is my sole boatbuilding experience, I have absolutely no clue if this is typical or not, but I had no trouble truing things up on the sawhorses and couldn't get things straight in the cradle.
