Rice paper works well. It virtually disappears under the epoxy, leaving only the printed region to show through. Kurt and several others have posted links to pictures that look really good.

I wouldn't bother trying to photocopy onto the fiberglass (which I don't think would work.) Silk screening it might work, but that would probably affect the epoxy bond in the area of the design. You could print a plastic plate or something and put that on the deck, but why build a beautiful wooden boat and then put plastic on it?
