I wouldn't mess with the design or plans provided by CLC unless you know a lot about boat design. However, there are lots of modifications you can make during the finishing stages. The kind of stuff Kurt mentioned. In fact, I strongly recommend Kurt's site, it is both entertaining and informative; and is sure to give you a bunch of ideas.

If that isn't enough, I've started organizing web links related to kayak building by build phase on BoatBloggers.com. Using the index in the right hand column, you might look under "Fitting Out", "Installing the hatches", and "Painting and Varnishing" for modifications that won't change the performance of the boat.
