I am curious to learn more about this idea. What is the reason he does that?

For most boats you would have more panel joints that way, and while that might conceivably improve the stiffness of the hull (a critical factor in the case of high performance sailing dinghies) it also increases build effort (critically important to us lazy, eager to launch S and G builders.)
