I think if you don't care about a smooth professional finish don't sand. But I've seen a few boats that either were not sanded or were sanded poorly and they really don't look too good - kind of slapped together and sloppy. Epoxy does not flow like paint, it cures lumpy and wavy. Subsequent coats just accentuate any imperfections underneath. That is one reason that though with timing (which I think is more like 24 hours) you can skip a sanding stage but you sand afterward in preparation for your varnish or paint coating.
