As long as your boat is waterproof, it is ready to float. So after all wood is protected by epoxy, yer talkin' mere cosmetics. It'll take looong time to bake your epoxy off in the sun -- I know!
My first two boats, Mill Creek 13s, were launched just as soon as they had become waterproof, and went on to live outdoors from March 'til July all over the western USA. Sure, they kinda needed a varnish job after all that, but it was no big deal.
