If you've laminated the wood, cedar will be more than sufficiently strong. If it's a single piece shaft (no laminations) that may be different but I have no experince to draw from at that point.
As for the blades, I have 13 layers at the blades, each at 3/8 inch. I was planning on a 5.5" wide blade which is of course larger than actual blade I built. If your blade is wider with the walnut showing that's fine. You don't have to make the blades the dimensions sesignated in the book. I would recommend that if you go wider you should make the blade a little shorter so you have the same surface area. That's what's really important anyway.
If you don't like the feel you can always make another one later.
