sounds like you're doing everything right,,,learn to side surf since that's where the wave will take you eventually,,once the waves are at your comfort for side surfing to the beach you HAVE TO follow the sets and pick the smallest one to FOLLOW back to shore.

My suspicion is that you are simply experiencing a normal broaching where the hull shape in waves will determine handling far beyond what you can do with a blade,,in other words the area of the kayak and force of the water greatly exceeds any human capability with a paddle as a stern rudder or even a rudder once the bow is stuck. It'll take a 7' surf kayak with a flattish bottom and soft entry to have the similar control on a wave that you have on flat water with a 17' kayak.
