I had a similar overhang on my LT17. Mine was a little less, maybe 3/4". I wired and faired the boat as if nothing was wrong. After fillets were applied (and I used a long, thin stick to ensure I had thickened epoxy way down in the stern) and the epoxy cured, then I trimmed the bottom hull pieces to a line matching the original keel line. Just saw straight up the back and round over with a similar radius using sander or surform.
Looks fine to my *inexperienced* eye.
Since your overhang is longer, you might want to have an extra clamp or two (at lease 1) squeezing the bottom panels together near where the arrow in your diagram is pointing.
