I saw one of these as well as one under construction at the boat festival in Vergennes, VT a few years ago and I was interested also.

I have also seen a variation where the "bottom" is made from one piece of plywood and rounded like a yare.

I haven't built one "yet" but have made paper and cardboard models as a way of testing the technique and it seems to work well.

I say, go for it!
