your curiosity as to why the Pax18 and 20 are fundamentally different hull shapes is a reasonable question. The difference between medium and big for similar use hulls shouldn't result in totally different hull shapes. The 20 isn't a conventional hard-chine design in that the bow is more of a vertical wave piercing shape. If you wanted to look at a conventional hard chine design then all those long skinny greenland shapes with long overhangs. The Pax18 does have a low wetted area for it's displacement but it's kind of like the bottom four panels of a very big eight panel hull.
