I made my work table from 1 x 4's and 3/4" chip board with 2 x3 legs. I made it 30" wide. I actually made 2 8' tables for building a 16' boat. I then added a bridge between them and added tow more pieces 18" long making the table 19' for constructing my WR-18.

Thus I'd suggest a minimum width of 30 inches.
