If you round over (sand) the chines and shears, it really doesn't matter if the epoxy is darker because four of the plywood plys will show anyway. I have found that epoxy mostly thickened with fumed silica and colored with just a little cedar wood flour will match the Okoume plywood. Beware cured epoxy thickened with Cabosil (fumed silica) is very hard to sand. If you use it be sure to get the surface smooth at application and scrape the next day. After a hard cure the stuff is bulletproof.
