Howard, no... I don't have the exerience you request, but what I do have might be of some help, who knows?
I built two Squeedunk Cormorant 16s as hybrids. The boat ought to compare well with a Chessy 16LT as far as how its original design and construction is concerned. The first boat came in at 38 lbs, and the second at 35. I took no particular pains to make 'em light, just paid attention to detail as always.
At any rate, I do not see using 3mm wood as any big deal, particularly if you already know the boat will be protected from rough handling and used on calm waters. In fact, I wouldn't hesitate to build ultra-light if I could guarantee myself such conditions for the most part. Hitting 35 lbs ought to be relatively easy.
And I'm here to tell you, handling a 35 lb 16-footer is a real joy!
