If your urethane clear will provide the UV protection needed for the epoxy then there is only one reason not to use it. That is, you should consider the difficulty level required to repair scratches. Any avid kayaker knows he will be hosting a plethora of scratches on the bottom of his kayak after each paddling season. If your proposed clear coat is difficult to repair I might shy away from it. If you consider the recoat easy then shoot away and post pictures.
