At winds under 15mph you shouldn't have to do anything to the trim to maintain course. It's all where you put the blade and move it with your gut. The deep vertical stroke should only be in the forward quadrant and the sweeping stroke should only be in the aft quadrant for severe weathercocking in high winds,,,sometimes putting in a momentary kneelift on the sweep will make it more effective. This paddling stuff is right up there with ice skating for finding technical solutions. What length of paddle are you using?
