Dave,

I'll bet the existing situation is waterproof, and now that everything is cured down in those concave angles, I would leave it alone and chalk it up to experience.

Cutting the ridges out would be difficult - heavy sanding would be the way, and as you said, you'd lose the integrity of continuous glass over the seams. Then you'd want to add more tape and epoxy to get back to the strength you have now - with more weight.
