These were unglassed fillets. Thx for the additional suggestions, will try the alcohol and finger idea. What kind of plastic did you mean, like, plastic wrap? That would certainly eliminate any wax getting on the fillets. But the alcohol idea is zero effort, so I will try that too--since the gloves are already on and there is always a big spray bottle of alcohol handy by the boat. I will say that the cool thing about laying waxed paper on the fillet was it allowed me to use my same filleting tools, so the fillet shape, finish, and radius were perfect without trying. However, I don't recommend my method for people who are skilled with goop--for example, when Normy put fillets in his boat on New Yankee Workshop, he just took one swipe and they were perfect. So there is no benefit in a trick.
