When I put together my hatches last summer, I waited about 72 hours before releasing the clamps. the daytime temps were in teh low 90's and the nighttime temps were in the low 80's.

If you haven't gotten to the coaming yet, then you also need to leave that clamped for a few days as well even in high temps. Remember, epoxy can cure enough to be sanded in 24 hours, but that doens't mean it's going to hold up to stress that fast.
