prior to applying varnish

I think that I might be ready to varnish my Petrel ( finally ). I bought Interlux Perfection Varnish (2 part ). If the last coat of epoxy looks good in the morning, can I just apply the varnish or do I need to (one more time) sand my beloved kayak ? I have paddled it too many times without the UV protection, but I think is was well worth the risk. What a great design!
