I read somewhere about how to prevent wood glue on the surface of cedar strips from changing the absorbtion of the expoxy and making light spots on the surface ( like I did in a few spots. What do you do to prevent that? it messes up the finish a bit.

Only way I know is to work carefully and clean any squeeze-out and/or drips up with water (assuming the glue you’re using is water-soluable when fresh) before they begin to set up.
Once they’ve soaked in and dried/cured, you might be able to scrape/sand them off to raw wood but knowing you’ve got it all 100% removed is really iffy.
