Sorry for the delay in reply- just noticed your post.
The breasthook and rear knees I made from 1" mahogany plank, I think the same material that came with the kit. It sands real easy. I wanted something just a little beafier, and I wanted to be able to make them notched so I can place inwales.
In fact, I just got around to mounting them on the boat today. I'll post updated pictures soon.

It is helpful to see how you are putting your Wherry together, Hickory. I like the breasthook you built. It looks to be about an inch thick. Is that right? What wood did you decide to use. I am thinking of using cedar, but New Brunswick has a lot of "Eastern" cedar. I'm curious about what you turned to in Seattle.
