I am finishing a WD 12 and hope to put off varnishing.
How long can I wait to varnish is keep the WD in my garage between paddles?

Well, I won't exactly recommend it, but I never bothered varnishing my NorthBay. It held up in a garage and outside on a rack in the backyard for about 5 years before obviously needing some repairs.
