In a kayak that already has the deck installed, I have seen pictures where the builder will stand the hull on-end, against a tree or building, and literally pour the epoxy into the end through a hatch opening. No dam is required. A relatively warm day is needed, unless you have very high ceilings in your shop.
The alternative is to do the end 'pour' prior to installing the deck, and use a temporary dam, with the hull level on its stand.
