Design Advice

I'm looking to build a kayak and have a general question about two differnet designs. I'm considering the Redfish Spring Run and Nick Shade's Guillemot. Can anyone give some pros/cons for each of these?

I'm new to kayaking, but I'm looking to build a boat that I can grow into rather than grow out of. I'm 5'11" and 200lbs and plan to use it in open lakes and smaller rivers on day trips.

I've already built a strip canoe, so I'm not concerned about construction complexity, more about the performance differences between these two boats.
