Sanding Goals

I'm building my first boat, a ch17LT and have just finished the third fill coat on the outside of the hull. So, two questions. When I begin sanding the hull am I trying to obtain a smooth finish just for appearence sake or are there other factors? Secondly, is there some reason I can't do some of that sanding now so I'm not faced with all of it at the end of the project? Thanks David
