Here is a picture of the flip-up rudder on my Jimmy Skiff. The rudder blade is sandwiched between the two 'cheeks' of the rudder head and held with a single stainless bolt and wing nut. The head could be made smaller to fit the kayak better. This is a very simple, yet effective set-up.
