One huge benefit of stitches is the ability to loosen and re-tighten them to adjust the fit of the panels until an absolutely fair hull is achieved, well never quite perfect, but pretty close.
Being prone to ineptness I have almost always needed to adjust things, more skilled builders probably get it right the first time.
I like to tab the seams and pull the stitches, but only after they have done their work.
