The hull to deck joint is all in the sheerclamp, deck glass is superfluous to the deck joint and only serves to protect the edge grain from water intrusion.

4oz deck glass is a good minimum to start from for normal deck whacking. If you forsee using your kayak like one would in a sea kayaking course, t-rescues, scrambling on the aft deck, tossing kayaks over in your lap and having yours slid across the rescuers boat leveraging water out as would be necessary with flooded compartments then going to 6oz wouldn't be a bad idea. If your careful about how you carry and use your kayak you could leave the glass off but there are better ways to reduce weight than the protective layer that allows for varnishing to see the wood.
