Lincoln,

Vacuum bagging seems like an extreme step when all you need to do is leave off the nails and use straps, packing tape, etc. to hold the deck in place until the epoxy cures.

Apart from the expense for all the equipment, remember how the Chessie deck needed to be attached in stages to form the distinctive double curve in the bow? I'm not sure how that would work out with vacuum bagging.
