Hope you do find time to do the test to determine which provides the most strength. Here's a design.

Samples are same weight, length, and width. Sample A is plywood, Sample B is plywood epoxied on both sides, Sample C is plywood glassed on both sides.

If the C is less than 100% stronger than A, then the plywood provides most of the strength.

Good luck, though, matching the weights without compromising the outer veneers of Sample A.
