Sassafras 12

thinking of building a boat with my son. He is only 7 but interested in helping where he could and being a part of the process. I already built a Mill Creek off of plans but it was years ago and I don't remember that much about it. Even if I did, this would be that lapstich process and wondered if anyone could tell me whether or not I want to take that on and how easy that process has become. I think I would buy the kit this time instead of buying the plans. Any advice on that? Any different boat recommended? I want it to be something the kids could use as they grow up and I this the Sassafras 12 would be good because it holds some stuff and could be paddled like a kayak instead of a canoe. Advice out there?
