SIT ON TOP PLANS

Has anyone ever build a sit on top wooden kayak or modified the plans from a sit in to make it a sit on top? Living here is the warm south, sit in boats are awfully warm and fishing from one is much harder than a sit on top. Any help would be much appreciated.
