I'm not a medical expert like Ryan, but I do a fair amount of running, and am familiar with injury-avoidance methods. Paddling (other than in surf or white water) is low-impact, so would seem to be an appropriate exercise for someone with bone or joint problems. If you are out of shape, don't paddle for too long to begin with, try to build slowly. Try not to paddle when you are cold or stiff, or you risk injury. You might need to warm up with some gentle stretches before you get in the kayak. If rotating your torso is difficult, you can still paddle using your shoulder and arm muscles, although you won't go as fast and those muscles will tire more quickly. Take it easy, and above all enjoy yourself!
