Shawn, I am at a similar point as you in my project, so what I am about to say is not born out of experience, but rather that I have a penchant for reading very small print on paint cans and in Material Data Sheets... The Pettit Easypoxy instructions state: "Do not apply Easypoxy on extremely humid days (90�+ RH) or when rain is threatening. When working in cooler temperatures be sure the air and surface temperatures will remain at or above 50�F for at least 8 hours after application." They also indicate that you should have a seven day cure period for submersed portions of the hull before putting the boat in water. They have similar cautions for the Flagship Varnish. This could vary by paint and varnish brand, but it would be a good idea to consult the manufacturer's instructions before deciding. Sorry if I 'rained' on your plans. I too was hoping to be set to launch by now.
