I've successfully applied Transfast water based dye from Woodcrafters to a plywood deck and I just completed staining a shape on my SW17 hybrid. But as Dave says, you have to wait until fairing and sanding is complete, which makes it difficult to apply to one or two strips. There will always be a little bleeding onto the next strip. The glue lines limit the bleeding, and scoring with a razor helps a little, but I've always ended up painting on a pinstripe to make the transition look more crisp.

You might want to experiment on a small test section of glued up scrap strips to see what happens. For this test you get by with simple food coloring in water. Go for it!
