Once the epoxy is cured, it matters little if you switch to another brand. Just don't try to mix resins and hardeners. That doesn't work well, particularly if you switch form a 5 - 1 mix like WEST to a 2 - 1 mix like RAKA, MAS, System 3, etc.
I've found RAKA to be cost effective, although in the overall cost break down, using WEST on a boat the size of a kayak isn't gonna add all that much to the overall costs. When you are building something like a 22 or 25 footer, of course the differences become much more evident.
