Pollen

Good Morning,
I am a first time builder about to start a Shearwater 17. Unfortunately spring has arrived in NC and I am concerned about starting the boat with all of this pollen in the air.
I will building the boat in our garage but the door is not airtight and pollen does get in. Should I limit myself to the stitch & glue portion for now and wait for the pollen count to decrease before applying the fiberglass?
Thanks in advances for the responses, this will be the first of many questions.
